Easy Peasy Veggie Soup

I had a craving for vegetable soup all last week. I went to a little cafe by work on my lunch and got a bowl of sweet potato and pumpkin soup.. It was nice, but not what I had been imaging! The next day I had a quick nose around Coles, they had so many different types of soups in the fridge, and I was just going to a get a few to have for lunches. But then I looked on the back at the ingredients, I was shocked to see how much suagr and preservatives were in there. To me it just didnt seem to be the healthiest option. 


So today on my day off I bought lots of veggies, stock, and made my own! I hadn't made soup in years, I didnt follow any recipe, I just put in what I wanted and added the stock and left it sizzle. Adding in some salt and pepper. When I first tasted it, I was gutted. It wasnt nice at all!! But I let it cook for another 25 minutes and hurray! Its ediable! 

I had no blender so I just had it chunky!

Heres what I used:

3 Table spoons coconut oil
1 Sweet potato peeled and chopped
1/2 pumpkin chopped
1/2 Broccoli chopped
2 Handful of Spinach
2 Celery stalks chopped
1 Large onion
1 Garlic
1 Courgette/Zucchini
1 Can of chick peas
1 Cauliflower 
700ml Vegetable Stock
2 Table spoons of greek yougurt  
Salt & Pepper 



I literally just chopped everything, added oil to the pot and cooked the onion,potato and pumpkin first 4-5mins.
Then added in slowly the rest of the veg, and poured in the stock.
Simmering for 30-40mins
Adding in salt and pepper towards the end.






Easy as!!!

Try it when you have time. Feels so nice to know i made it myself and nothing extra was added to keep it from going off. Iv popped it in a container in the fridge for my lunches the next few days with some bread. Yum yum!
